What you need:

Serves 2

  • Extra virgin olive oil
  • Around 300g tomatoes
  • Small red onion
  • 2-3 slices of leftover bread (sourdough works well, any leftover crusty bread will do)
  • 2-3 garlic cloves
  • Few leaves fresh basil
  • 1 tbsp red wine vinegar
  • 1 tsp Italian style seasoning
  • Salt and black pepper, to taste.
